The Spanish immersion course I attended was hosted by Universidad Internacional, The Center for Linguistic Multicultural Studies.  I thought it was a good school.  It is the language school in Cuernavaca that my school district has chosen.  I know there are many others, but I'm not familiar with them.  

As for this kind of program benefitting your granddaughter, that is a tough question.  Universidad Internacional does indeed have programs for students of her age. And I'm sure they offer classes for a variety of Spanish language skill levels, but I would talk to a school representative to get more information.
